Green Goddess Garlic Dressing from "Forks Over Knives" Book




 The "Forks Over Knives" book has arrived!! Remember the "Forks Over Knives" movie that was featured on the Dr. Oz show (see end of posts for links). Yeah, I have A LOT of health/cook/raw uncook books.  It's a hobby.  I pre-ordered the "Forks Over Knives" book from Amazon, thinking, it's cheap & fun entertainment, not expecting it would be a great cookbook!!  Although "The China Study" is a much more thorough book on health, casein, animal proteins, etc....the "Forks Over Knives" book is a short, to the point version of that information & a compilation of some of the information from the movie.  The beginning part has a page or two from many of the people profiled in the movie, and then the rest of it?  Lots of recipes!!  Mostly zero fat, whole grain, uber healthy plant based goodness.  Some of the recipes have some nuts, some have tempeh, but all of the recipes using unrefined type of ingredients.  A must have Vegan Book for those of you who don't just live on "Vegan Cupcakes take over the World" (yummy but not super healthy!).  Also a great introduction to clean, plant based eating for health reasons.  Recipes are easy to make & fairly cheap.  No crazy vegan Tofutti here (yummy too, but still processed!).  So even though my life is self inundated with the latest & greatest cookbooks, this book is a super amazing addition to my kitchen.  I am so over gluten, sugar, refined anything, and these recipes take you back to the "basics" of healthy cooking with the preparation made for peeps living in the real world.  Lots of easy snacky foods too.  You could even do your own experiment for 1 or 2 months and get your bloodwork done before & after.  You might be surprised!!

"Forks Over Knives" Book.  Colin Campbell & Caldwell Esselstyn.   Only $7.00 on Amazon today.  And if you don't already know this stuff, $7.00 is a steal for potentially life saving information.  What is so cool about this is that the recipes included are from all sorts of cool veg-heads.


 So the first recipe I made was the "Green Goddess Garlic" Salad dressing which is actually a recipe from Isa Chandra Moskowitz's "Appetite for Reduction" book.  You just take your Garlic, Chives, Parsley (I didn't have any), Tahini, Nutritional Yeast, Miso, Lemon Juice & a pinch of Salt.  Hello Vita-Mix or blender.  And you have awesome, pretty much oil free dressing.  So Zero "Oil" but it does have some tahini, which is sesame seed butter.  Well, tahini is loaded with calcium & other goodies where Olive Oil is just straight fat.  What I love about this book is that the emphasis is on eating real food and not adding processed oils (in general) to your diet.  Everyone says, "Yeah, but you need oil".  Well, maybe your body needs good fats, but why wouldn't you get those fats from foods?  What is the benefit of eating olive oil over adding olives to your salad?  Nuts, Avocados, & Olives are all great ways of adding some healthy fats to your diet while still getting nutrients & fiber.

  2. Think it's probably a good book for people with newbies to plant based diets too.
    Think I might have to pick up the Fire and Spice book you just wrote about as well!! We do nothing without spice!

  5. oh awesome, thank you sooo much! I tried to make a tahini dressing on my own because i needed a salad dressing ..i was thinking 'i know there's some tahini and some lemon in it" and for good luck i threw in some red wine vinegar- bleeghh i had to throw it all away - dont know what i was thinking. i'll follow yours next time :)

  8. There is a full blown cookbook coming out this August (2012). I've pre-ordered it! LOVE LOVE this dressing...I make it whenever I can! I haven't made it in a while and forgot to check the ingredients before leaving the house this morning - my shopping list is complete thanks to your post! :-)
