Black Split Lentils (Urad dal Chilkha) from "The Indian Slow Cooker Book" by Anupy Singla. Her next book is going to be ALL vegan, but not all slow cooker.  You really need the slow cooker book.  It is nearly all vegan, and about the easiest book on the planet.

Well, it's winter.  Which means not only do we keep our house at 60, don the polartec, and still have massively large heating bills (old homes may have character, but you can usually see your breath as well)-but it also means to put all of your slow cookers on the counter for the next several months.  Okay, so mine are out all year......

All your "Zero Point" foods! I guess Weight Watchers considers fruits & veggies zero points.  So if you are a raw foodist, a fruitarian, or a truly plant focused vegan, you  have got it going on!!

Urad Dal.  If anyone knows of truly Gluten Free Indian style legumes, then please let us all know!! Seems that most are difficult to find from a truly gluten free facility.  Most are made on the same lines as wheat, sigh.  So for the 99 percent of you, is great, and fine, & dandy.  But for the Vegan Celiac.......well, just another reason you want to bang your head on a wall, or just eat bananas!!



Seriously.  You put the ingredients in, add water, and push a button.  



This is one of my favorite dishes because it is one step.  Not lots of ingredients, and super delicious.  If you don't have this book, you need to run out and buy it.  Or run to your computer and buy it, since there are not many places to buy books left.  :(

And 30 seconds of kitties living on the streets of East St. Louis. Surely someone needs a Siamese kitty, I mean, doesn't everyone?  They need fosters!

                                              
Nobu passed away in our arms just before noon December 28th, 2011, at home, on his own. We are heartbroken and miss him much. Thank you to Randy at Stray Rescue of St. Louis for having us "foster" him. We feel so grateful that Nobu chose us to be his mommy & daddy and he will always be with us. Kale & Carrot juice got him through the holidays............I know his body no longer served him, but we will all miss it greatly. And happy Birthday to Pj at Gateway Pet Guardians. It is all the people that fight, continuously, daily battles for the animals that give me hope. We are all reducing just a little bit of suffering by every kind action we take. By every animal we take in, by every plant based meal we eat, by recognizing that all sentient beings feel. And often they are far more enlightened then we could ever hope to be......

I adore eggplant in all forms but hate that often recipes require oil to bake it.  It is harder to get the whole effect with just water when you are cooking on the stovetop, but the Slow Cooker (crockpot) changes all of this!  Since the food is cooked over such a long period of time, the veggies break down to create their own moisture.  Anupy's recipe did call for oil, but I just used a little bit of water instead and the end result was fabulous and guilt free.  I am a lazy vegan like that.  I don't want to have to work any harder than I need to in order to rid myself of my emotional eating calories!


What is also cool with all of her recipes is that they are all "healing".  And the black one on the plate above is called "Nigella".  


Of course hot peppers are touted to boost metabolism and may be heart helpful.

Turmeric has been said to help inflammation and may even be helpful in the prevention and treatment of Alzheimer's.


You can buy these spices cheap at any International Store or you can order online if you want organic/fair trade from Mountain Rose Herbs.




I always keep my ginger in the freezer so it doesn't get soft.  Keeps forever in there and easy to grate.

For the Indian Slow Cooker, you can really use any tomatoes.  I use Roma probably because an affordable organic version usually exists.  Not the most flavorful, but seems that it is more for brothy effect.  If I don't have the tomatoes, then I just put some tomato paste in and make do.  For an eggplant dish though, I would try to use real tomatoes!


Blend all that stuff up!

'Tis the season to drag that slow cooker out!  Stock your pantry full of dried beans, spices, and veggies. Make sure you keep cilantro around.  And you can cook for months!  The Nigella gave this the coolest flavor and it seriously tasted like pizza to me!  LOVED it!!  


A great new movie, "Get Vegucated", is making the rounds.  What happens when you put Die Hard Meat Lovers on a Vegan Diet?  Looks like a great film!

Dads' Chapatis, Vegan Korma, and Red Lentils with Curry Leaves

We had kind of an "impromptu" family get together right after the Holidays.  I thought I was just going to see my 2 aunts (and folks), but their hubbies showed up too!  So great to see everyone.  Of course my father made an Indian Feast.  My 2 uncles aren't super crazy about Indian Food, but I think that the South Indian Lentils with Curry Leaves  passed the test.  One uncle wasn't crazy about cauliflower on it's own, but otherwise he might have even been okay with the Korma.  My mom loves Indian food, but I think she prefers the creamy dishes.  So I was happy that my dad made a Vegan Korma this time. Remember, if you use coconut milk, try to get a brand that does NOT use BPA's in the linings of their containers.   Any type of canned anything will most likely have BPA's.  Follow link to read about just a few companies and their status on BPA use.  It appears that Native Forest Brand may be safe, but I would always call first to confirm!  Changes in packaging can be made at any time.  Search Amazon.com for native forest coconut milk.  I know lots of people just shrug off BPA's but we tend to do that with everything until it is right up in our face about the dangers.  Canada has banned them.  I think I probably tax my endocrine system enough that it probably doesn't want anymore disruptions.  
Vegan Korma.  One of my mom's faves, but this time without the animal products.  He got the
recipe off of the internet and just "veganized" it.
